Olive oil is regarded as liquid oil as it not only add taste to the food but is also one of the nature’s healing wonders. Evidence of existence of olive oil tree can be trace back to 3500 BC. At that time, it was growing extensively in mediterranean region. Afterwards, its cultivation was spread to Asia and Africa.

It is available in different varieties worldwide, brief description of which are as follow:
- Extra virgin Olive oil: It is the purest form of olive oil due to high content of vitamins and minerals. It has acidity level of less than 1%, due to which it has perfect taste. Extraction methods include cold pressed first; any sort of chemicals and hot water is avoided.
- Virgin oil: With the acidity content of 3.3 % it is less tasteful than extra virgin; however, the same extraction methods are follow for the preparation.
- Refined Olive oil: The refined product of virgin oil produces this variety. Acidity level is less than 3.3, which makes its tasteless and unpleasant.
- Pure olive oil: Mixture of virgin oil and refined oil yield this variety. Acidity content is same as of virgin oil; however, the nutritional content is far less than virgin oil. It is used as all-purpose oil.
